Brut Reserve No 9 – 1 Bottle

Our multi-vintage blend uses fruit from all varieties and areas of our single vineyard to produce a wine that displays the unique qualities of the whole site. Using reserve wines, aged in oak, that have been carefully built up and nurtured from our very first harvest, we can add layers of complexity and texture to each wine. Every numbered release has it’s own identity and make up, which we love to celebrate. No 9 is based on 2020.

Blanc de Blancs 2020 – 1 Bottle

2020 was our first year trialling organics and the season produced a small but incredibly ripe and concentrated level of fruit. Combine this with our developing winery techniques of wild yeast fermentation in barrel and minimal use of sulphur, we started to see a purity coming through in the wines that we had never seen before. Although still in its infancy, this wine is already showing signs of toasty elegance combined with soft ripe fruit, but it’s the freshness that makes me think it will live a long and beautiful life.

Pinot Meunier 2019 – 1 Bottle

85% of this wine was fermented in stainless steel to preserve the unique aromatic qualities of this variety. The rest was fermented in a 500 litre oak puncheon to build structure and length. This is a naturally soft and elegant wine with a subtle floral nose but also has a savory, saline edge.  The palate has a moreish quality because of the soft acid profile and elegant almost feather light feel, with the saline finish really drawing you back to have another glass. This wine seems to get better every time I try it. Being the first iteration it’s difficult to say how long it might go on for but if balance is the key to longevity then this has it in abundance.
